| dc.description.abstract | Yog‘ kislotalarining oksidlanishi — yog‘larning asosiy kimyoviy reaksiyalaridan biri bo‘lib, u ularning sifatini, ta’mini va oziqlanish qiymatini o‘zgartiradi. Oksidlanish jarayoni yog‘larda erkin radikallar hosil bo‘lishi bilan boshlanadi va natijada hid, ta’m va rangning o‘zgarishi kuzatiladi. Yog‘ kislotalarining oksidlanishi oziq-ovqat mahsulotlarining raf ömri va xavfsizligiga ta’sir qiladi. Ushbu jarayonni oldini olish va sekinlashtirish uchun antioksidantlar va saqlash sharoitlari muhim ahamiyatga ega. Yog‘ kislotalarining buzilishi inson salomatligiga salbiy ta’sir ko‘rsatishi mumkin, shuning uchun ularning oksidlanish mexanizmini tushunish muhimdir. | |
